COURSE SUMMARY
Welcome to Sustainable Homestead Food Skills, a five-day intensive workshop, with Carol Wagner and one of our most important classes! Revolutionize food security planning by increasing your knowledge and capacity to be self-reliant. Dry foods have the highest nutrient retention, and last 10 years or longer if properly stored. Foods dried at low temperatures retain almost all their nutrients while taking up very little space. Money doesn't grow on trees, but jam does! Learn to preserve local excess fruits, veggies and nuts, and those apples under your neighbour's tree will never go to waste again. Processed food doesn't have to be bad for you, when you do it yourself! Yummy and low environmental impact food at a price you can always afford. Environmentalists, self-reliance seekers and hikers unite!
Carol is part of a group in the process of developing an ecovillage in the South Gulf Islands of British Columbia, Canada. The ecovillage will be a model of sustainable land use and will feature public outreach and education as included goals. She has completed her Permaculture Design Certification and Permaculture Teacher Training Certification and is a well known speaker at many of today's leading conferences.
